Flourless Chocolate Cake

Prep Time: 15 minutes

Cook Time: 40-60 minutes



4 oz. unsalted butter, cut into small cubes

8 oz. bittersweet chocolate, cut into small pieces

5 eggs, separated

2 pinches of salt 

2/3 cup of sugar

Powdered sugar, for garnish



1. Preheat oven to 325 degrees. Butter and flour a 10" round cake pan. 

2. Melt the chocolate and butter in a bowl by microwaving it in 30 second intervals. At the end of each interval stop to stir. This should take about 2 minutes.

3. In another bowl, whisk together the egg yolks, salt and all but 3 tablespoons of the sugar. Stir the melted chocolate into the yolks until combined.

4. Whip the egg whites on medium speed with an electric mixer until they are stiff enough to hold a soft peak. (This is the most important step of the recipe - be sure you have a parent check that you are getting soft peaks!) Then slowly add in the 3 tablespoons of sugar and beat them just until they tighten up, but are not dry. Gentle fold the egg whites into the chocolate mixture until combined and pour all of it into the cake pan. 

5. The original recipe calls for a cook time of 1 hr 15 minutes, but start checking at 40 minutes as our oven was done at 42 minutes. 

6. Remove the cake from the oven and onto a wire rack to cool. The center may sink a bit which is fine. Once cooled, place the serving dish on top of the cake and, holding onto both the dish and the rack flip the cake over. 

7. Garnish with powdered sugar before serving. You could use a sifter for a more even, smooth look but we let loose and sprinkled it ourselves. Add berries and mint on the serving plate if you want to make it look even fancier!
